Fried Red Tomatoes

As we get closer to growing season I thought I would post a super delicious recipe to use with those amazing tomatoes you will be growing this year!

I love tomatoes in pretty much everything, but I don’t actually like tomatoes by themselves. I know I’m such a weirdo! lol! So instead of doing what a lot of farmers do with a raw tomato and just slice it up and eat it plain or with some salt, I decided to fry mine up! O….M….G…. let me tell you they were delicious and are probably now my new favorite thing, Though I’m sure they are not as good for you! Try not to eat to many! I failed that the other day, I ate way to much!

So here’s the delicious recipe I used, feel free to tweek it to your liking if you want and please share in the comments below what your thoughts are on this recipe

Ingredients:

3 large tomatoes or 6 Roma tomatoes (whatever your prefer)

1/3 cup of flour

1/3 cup of corn meal

1 egg

seasoning ( I used Italian )

salt and pepper (optional)

Olive oil for frying

Parmigiana cheese shredded or grated (for topping, or any shredded cheese you like)

Directions:

First you need to wash your tomatoes and dry them. Then you will need to slice them (if using Roma tomatoes horizontally is better). About 1/2 in thick. Discard tops. (You could also pick out the seeds, I know some people do this but I don’t see the point)

Next you will beat the egg slightly in a small bowl. In a separate bowl you will combine your flour, corn meal and any seasoning you want to add. Then pour oil in a skillet to come up to the side at about 1/2 inch and place the heat to high. (Have a splatter screen ready, link below to one off of amazon, just click the photo! these things are life savers and are easy to store. Save you from so much mess).

Now comes the fun part! You are going to take your tomato slices one slice as a time and dip it into the egg and then place in your dry ingredient bowl and coat both sides with your mixture. Once you have coated it you can place it in the heated oil and repeat ( be careful not to burn it, I find that once the oil is heated up I can turn the heat down to med-high). Definitely need the splatter protecting screens now to keep over the skillet so oil doesn’t splatter everywhere.

When a golden crust forms on the bottom side, turn them over and do the other side. This doesn’t take long, maybe a couple min on each side. Once done on both sides you can use a slotted spatula to transfer them to a plate lined with a paper towel.

Repeat process until all of them are done. Once all are done you can sprinkle what ever garnish you want. I loved sprinkling a little salt an parmigiana cheese on mine, very Italian!
